Cheddar is a solid, natural cow's milk cheese that comes in
a variety of colours ranging from white to yellow or orange. The flavour of
fresh cheddar is mild at first, but as it ages, it becomes sharper. The creamy,
silky texture of the cheese becomes stiff and loaded with microscopic calcium
lactate crystals as it ages. A mild cheddar is matured for two to four months,
a strong cheddar for six to nine months, and an extra sharp cheddar for one and
a half to two years.

Cheddar cheese is a popular cheese kind that originated in
England and is now produced all over the world. It's a hard cheese made with
pasteurised, standardised cow's milk and coagulated with calf rennet or a
rennet substitute. To acidify the milk, a mesophilic starter is utilised, and
the coagulum is sliced and heated at 37–39°C.
Cheddar is a hard cow's-milk cheese named for its birthplace
in Somerset, England's southwestern county. Cheddar is one of the oldest
cheeses in England. In recent times, just a little amount of the original
"farmhouse" variety is produced.
The solid curd is sliced, or "cheddared," into
small parts to drain the whey and then pressed firmly into cylinders ranging in
diameter from 12 to 15 inches (30 to 38 cm) and weighing from 60 to 75 pounds
(27 to 34 kg) in the conventional process of cheddar manufacturing. The cheese
is wrapped in thin muslin and waxed, and it has a mild orange-yellow colour. It
should be at least three to six months old, preferably one and a half to two
years old. Its smooth, rich flavour intensifies with age, but it should never
be harsh.
