Cheddar is a solid, natural cow's milk cheese that comes in a variety of colours ranging from white to yellow or orange. The flavour of fresh cheddar is mild at first, but as it ages, it becomes sharper. The creamy, silky texture of the cheese becomes stiff and loaded with microscopic calcium lactate crystals as it ages. A mild cheddar is matured for two to four months, a strong cheddar for six to nine months, and an extra sharp cheddar for one and a half to two years.

Cheddar cheese is a popular cheese kind that originated in England and is now produced all over the world. It's a hard cheese made with pasteurised, standardised cow's milk and coagulated with calf rennet or a rennet substitute. To acidify the milk, a mesophilic starter is utilised, and the coagulum is sliced and heated at 37–39°C.
